Hi! I’m Erin, the creator and owner of By Erin With Love. I have a certificate in Event Management and a qualification in Pâtisserie, which fuel my passion for creating beautiful, delicious cookies that are perfect for any occasion. I’ve always been in the kitchen, baking since I can remember. It’s something that’s been in my blood for as long as I can recall, and it’s where my love for creating came to life.

I pour my heart into every batch, ensuring they not only taste amazing but also look stunning! I get so much joy from creating beautiful cookies and being such a sweet part  of your special milestones and celebrations. 

I started dipping my toes into the cookie industry back in 2018 while living at home with Mum and Dad. It was an exciting and uncertain journey we all embarked on together, not knowing where it would lead. In 2019, I took the leap and went full-time self-employed.

During the challenging years of 2020-2022, cookies became a way to bring joy to people’s lives. They were the perfect gift to brighten someone’s day, show love, and provide a delicious treat that could safely make its way through the post. It was a whirlwind of opportunity, and I’m so grateful for the chance to share these sweet moments with so many of you.

2024 brought with it an engagement, endless batches of cookies, and so many behind-the-scenes moments shared via Instagram stories (if you’re not following along, come join the fun!). Looking ahead to 2025, I’m excited for new opportunities, growth, and all the hard work that comes with it. It’s going to be an exciting year ahead!

When the busy months arrive, I’m incredibly lucky to have such a solid support group behind me. Nan’s the head supervisor, perched in a spot where she can see everything, with a cuppa in hand and a classic choc chip cookie slightly warmed in the microwave. Pa is the king of dishes and the one who whips up all the hot drinks! Maureen is the #1 packager and ribbon expert who also you may see pottering in my garden when you’ve come to pick up! Dad’s the master of building and stacking boxes, plus hole-punching gift tags. Mum, who’s done it all, now runs the heat sealer or works at the silicone mould station, crafting thousands of fondant embellishments. It really does take a village
